Mutaro Balde, un discipol Escoffier, este în prezent Executive Chef și GM la Bibo Restaurant din Hong Kong. A fost instruit cu Alain Ducasse ca Chef de Partie la Plaza Athenée Hotel Paris, iar anterior a fost Chef de Partie la L'Atelier de Joël Robuchon London.
