Chef pâtissier exécutif à la Mira Hotel à Hong Kong, Jean-Marc Gaucher anciennement a couru sa propre boulangerie traditionnelle de Français à Nice. Suite à son entreprise de boulangerie et de l'apprentissage sur la Riviera de Français, il a perfectionné son flair créatif sous renommée pâtissier Didier Berlioz à « La panetière » restaurant gastronomique Français à New York. Pour la dernière décennie, il a établi sa réputation comme un pâtissier primé dans des hôtels de luxe tels que les quatre saisons hôtel, Intercontinental et Conrad à Bangkok, Langkawi, Dubaï et Macao.
