In a dazzling fusion of sports, culture, and culinary arts, our esteemed alumni from the IDE Professional Diploma Programs in French Cuisine and Pastry recently played a pivotal role in the historic fencing exhibition match, “Palace of Champions: Fencing for Spirit” (「劍萃古今.躍動全運」), held at the Hong Kong Palace Museum on August 26, 2025. This event, hosted in support of the upcoming 2025 National Games, showcased not only world-class athleticism but also the creativity and dedication of our alumni, who crafted exquisite French delicacies and stunning chocolate artworks to celebrate the occasion.
A Grand Celebration of Sports and Culture
The exhibition match, organized by the GDCD Association Limited, brought together six elite fencers from around the world, including Hong Kong’s two-time Olympic gold medallist Cheung Ka-long (張家朗), French world champion Enzo Lefort (拿霍特), and Beijing Olympic gold medallist Zhong Man (仲滿). Held at the iconic Hong Kong Palace Museum, the event seamlessly blended historical elegance with modern athleticism, as fencers competed in foil, épée, and sabre disciplines amidst the museum’s curated exhibits of Qing dynasty military artifacts.
Alumni Culinary Excellence: A Creative Tribute
Our alumni Shine and Monica, along with their teams, were invited to design a culinary experience that reflected the spirit of the event. Drawing on their expertise from Institut Disciples Escoffier, they crafted an array of French delicacies to welcome guests, including:
